I need to do some trimming work inside my car and to also fit new window channels and get my front vents (quarter lights) to work properly. I also want to fit some Dynamat to the floor and doors at the same time. It occurred to me it might be easier to do these tasks if I removed the doors first.

So my question is - How difficult is it to remove the doors? And how difficult is it to refit them again?

    Any advice would be welcome.

Refitting the doors is not complicated as there is no adjustment possible :)
You need both times two people/four hands for it.
One must hold the door weight (pull from above or easier: support from below)
the other one has to remove the pins from both hinges.
Pushing the pins back in is easy, but removing is a different story:
Depending on the condition of the pair pin/hinge (corroded, worn out, tolerances, grease)
they pin stuck as welded or moves.
The bottleneck is to move the upper pin out.
It is NOT possible to push on the pin from above, as the axis is hidden by the front fender.
If you try to look from above straight down to the pin you can´t see it as it is hidden below the fender. There is a special pull out tool for it necessary. As the 308/328 etc. have a simmilar fixation with probably the same tool I would ask for something from a Ferrari workshop..

    Thanks Nicolai.

Can I do this without the special tool?

Does anyone have a picture of the tool needed or have access to one they could sell or loan to me?

    Without is really difficult.
But the tool is simmilar for a lot of older brands like Opel/GM etc.
Maybe you can make one by yourself, It looks like on this page (german):

Unless the previous owner took great care to lubricate the door pins, it won't matter if you have the tool or not. In my case (3 different Dinos), removing the door pins was extremely challenging. It can be done without the tool, as I never had the tool. In one case I had to use an impact chisel to destroy the pin, in another I use a heavy short-handle hammer and drift and chisel. The problem is that the pins frequently become one with the hinge - through age, rust, corrosion, and Karma.

Just work at it. It will happen. Purchase new pins, or have them made, and lubricate them frequently.
