Took it for a ride today and the temperature stayed around 180 even at speed in 75 degree weather. Plenty of antifreeze, could it be water pump? How can I check?

I'd check first that both fans are coming on. If that checked out I would then check for a stuck thermostat. You would hear a seized pump or one with bad bearings...

    I put in hyperflow cats...
    temperature dropped 15 degrees !!!!
Before, with stock cats, my gas cop would get hot, very hot to touch, now not even warm.

wow, my was running in the 160 range when on the highway, then would only get to 190 when stuck at a light for a while. Just yesterday I noticed it would not go lower then 180 and stayed close to 190 the whole time. Fans work, I can hear them kick on once near 190. I tried going faster, but that did not work, I will just try to keep driving faster.

    Thanks...

180dF is actually lower than desired, especially if/when the oil temp is also down that low. Some of the additive/anti-wear package in oils do not start to work until the oil is above 200dF.

But, my car with its previous thermostat would run this cold (thermostatic lower limit) with the new thermostat it tends to run no cooler than 195dF.

Sounds fine to me. Mine tends to run on the cool side unless I get going for an hour or two of spirited driving, then things will run around 180 F and 200-210 F for the oil

So what would be considered a high temperature to be worried about overheating?

I'd probably start to be concerned at 220 and make a move to get off the road and let it cool down. Red looks like 240 ish which is where it will start to overheat and where I'd pull over and shut it down. I've never seen mine go over 195, but it seems to get to 190-195 whenever I'm stuck in traffic. If it hit 220, I'd probably take the next exit or stop at the next gas station. If it hit 240, I'd pull over immediately and shut it down.

Mine was running a little hot and the fans whould always be ON. I found that my antifreeze/water ratio was (60/40). I did a coolant flush and reduced the antifreeze/water ratio to 40/60. The running temperature dropped drasticly.

Put on the Challenge grill today and it lowered the temps a lot. I have never seen mine over about 192, so I assume I am good. Thanks all.

+1 ........ going down to 160° F is not good, it shows thermostat may be stuck open, which would affect the ECU's ability to properly administer A/F ratio. That lower temp reading may cause a rich condition (ECU thinks engine is cool) and the extra fuel would kill the cats.

I noticed something yesterday. It was 94 degrees Fahrenheit and the car was reading 190 -210 on my drive. It gets up to 210 sometimes when sitting at a stop light before the fan kicks on. What I thought was strange is when water temp gauge was reading 190 degrees I shut the car off and the temp would then climb up to 210 when I checked it just a short time later.

Why would the water temp rise after the car is shut down?

It would rise from latent heat in the engine and no air or water flow to the radiators to dissipate it. I would think that's normal.
