    I recently returned from a great trip with my family to Hilton Head, SC and Savannah, GA, and I now have a new guilty pleasure in life - shrimp and grits. Had it more than a few times down there, some better than others, but what's not to like?

    I even had plain grits at Paula Deen's restaurant with some sort of beef stew (they had a name for it, can't remember) - man, it was off the charts!

    Anyone have some killer shrimp and grits recipes to share? As a northern boy from NJ, it's not often found in these parts, and I have a craving for it :)

    I found out the name of the stew - GRILLADES! Rib stickin' stuff, and especially good with the grits...

    Grits = polenta.... in the south its homony ( white corn) grits.

    I use a 2-1 ratio of liquid and grits.

    I cook mine in white wine & water, with thyme.

    bring the cooking liquid up to boil, pour in the grits - sprinkling them and stirring, and stir till they are creamy and soft. if not enough liquid, add some from time to time, the grits will eventually absorb all the liquid.

    careful not to burn, do on medium heat. at the end I use a 1/4 cup of cream and 1/2 stick of butter... ( depends on the amount of grits - 2cups for above ) and then cook untill its all incorporated and creamy.

    I like them thicker and not so watery.

    I like the shrimp on the grille... garlic, onion, honey, touch of soy, butter salt & pepper, some red pepper flakes... brush on and grille... put shrimp on top.

    Back in the day, when I lived in Tallahassee, I used to buy them from a mill in GA.

    PS I'd also get some half-inch thick bacon, fresh eggs, and make a batch of real biscuits. I probably lost a couple of years off my life, but worth it.

    With cream and butter - so good. I like them with cheese and a little bit of chiles to spice up, but not too much...just subtle.

    I've pulled a few recipes - I may just have to do a picture thread for one of them. I really want to try to make the grillades, got the recipe for Paula Deen's - really good stuff.
