The concept of deep frying a turkey is that the hot peanut oil sears the skin and keeps the moisture in. When you bake a turkey, the meat can get quite dry. Since the oil goes inside the bird as well, the cooking time is dramatically reduced since the carcass is being cooked from the inside and the outside at the same time. The reason peanut oil is used is so that it does not give off a fried taste. A turkey fried in peanut oil has nothing in common with tradtional fried chicken. Due to the tremendous heat of the oil, the chances of a problem are high IMO. Also you need to use a bird that is fresh or 100% defrosted as an ice hitting that oil is conbustible. I am shocked they sell the deep fryer units for $30 when you have to figure winning each lawsuit must cost the company $50,000 in legal fees.

My aunt deep fried a turkey fifteen years ago, back then it was far more rare of an occurance. She has since returned to using the oven, I think the oil splatter might have got once too often.

I wouldn't have believed it until I tried it at an in laws house a few years ago, but a whole turkey done in the peanut oil deep fryer is delicious and very good. Not at all greasy, just a real crisp skin and a very nice moist meat.

    Who da thunk it?
