The OM for the Jarama S states that the gap should be 0,35 mm but I've seen other figures too. In any case, 0,35 mm seems to be a very small gap to me.

I pulled the plugs the other day, installed by the PO, and they were all approx 0,6 mm.

    What is correct?

0.025 inches or 0.635 mm is correct. Almost all cars ran with this gap prior to electronic ignition. Once electronic ignition was introduced, the gap increased.

The tight spark plug gaps works great at 6,000 RPM, considering the profile of the piston and combustion chamber. But to be practical for street use, of which most cars see red lights and stop and go traffic, I personally open the gaps to about 0.025".
