The gauge seems to work fine initially (and I have a new sensor on the coolant tank), but when I hit a bump on the road it buries itself up at 250. A tap on the guage would bring it back down around 195, but more recently it will pop up to 250 and stays there. Any ideas before I pull the faceplate and check the connections?

    Not unusual at all.

Typically I see oil pressure gauges that stay at zero until you tap on them as well.

These instruments are not the best. I suspect that "if it wasn't for low-quality, there would be none." ;)

It used to work just fine - I know they're only supposed to provide us a "general indication" of what's actually happening, but..........

Just 5 months ago I had the same problem after I had a service done,so I knew I wasn't over heating,I took the gauge out and rotated it from left to right, and watched the needle to follow, lay the guage face down wait and then look at it if the needle moves from 250 to 0 and it takes a few seconds there's a spring broke inside,I bought a guage out of a 308qv that www.ferrparts.com was parting out for $75 and now it works like it should (not tapping on it everytime to get a reading),but most here will say its the connections but that wasn't my case, also go back on past post on this,

These guys http://www.paspeedo.com/ fixed my 308 clock, and later my 328 clock and my 328 tach. They can certainly fix your water temp gauge.
