Texas style chili & Fixins?

    By Texas style I mean no beans, cause, you know... Tehhxus.

    And what are your favorite fixings? Cornbread recipes? Bacon wrapped jalepenos? What else?

    I'm hanging out with my dad this week and we decided Thursday will be Chili Cook Off day in the kitchen.

    We started using ground buffalo instead of beef. Honestly, I cannot tell a difference but my wife says it has a lot less fat . She is correct though. After skillet browning the buffalo, there is very little grease ( fat) . Using bison will add to the campfire stories at least.

    nice, been too long since I've made chili.

    Got into Cincinnati-style for a while: served over thick spaghetti with cheese and onions (no beans) but now gravitating back towards pure chili in a bowl.

    As an alternative to corn bread, which there's nothing wrong with of course, "corn pone" is always a winning side dish:

    Bacon-wrapped jalapenos, stuffed with cream cheese, are my one of my wife's specialties. Have to sweet talk her into making up a batch, soon!

    While that "cowboy cornbread" sounds yummy, it ain't no corn pone.

    Real corn pone (some folks call 'em johnnycakes) are simply corn meal, bacon drippings, water, and salt - mixed to a thick batter (a bit thicker than for corn bread), and fried as individual round cakes in a cast iron skillet. Dense and gritty, but damned tasty. No baking. No eggs, flour, or leavening - and certainly no sugar. (Of course, this means no pre-made Yankee "cornbread" mix, neither.) :)

    For a different, but great tasting, alternative -- try using BBQ brisket instead of hamburger. It's now my favorite.

    No self-respecting chili has beans in it...so Texas style to me is "real" chili.

    So how'd the cook off go??

    I've been craving chili since you started this thread. Today my wife is hosting a party for 3 of her friends and their dogs, it's freezing outside, so a perfect time to make up a batch.

    Roughly following this recipe:

    Didn't have time to run over to El Rey Mexican supermarket so making due with poblanos, jalapeno, ancho, chilpotle, and one habernero.
    Using 3 lbs of 85/15 ground chuck and 1lb of ground turkey. Wish they were a courser grind but oh well.

    I also forgot to blend the chilis before throwing them in the pot with the chopped onions, so at least the veggies will be a bit chunky.

    Now to simmer for 4 hours, while incredible smells waft through the house driving women and canines crazy.

    Don't have masa harina but will crumble up and mix in 2 cornbread muffins leftover from last night's dinner.

    Cut some jalapenos in half lengthwise. Scrape out the seeds. Rub your eyes with the hand that scraped out the seeds. Fill the jap half with cheddar cheese. Wrap your favorite bulk sausage around it. I use Jimmy Dean. Shake the whole thing in Shake and Bake and coat completely. Bake @ 350 for 30-40 mins.
