    I love this time of year. Tons of food to cook and a chance to be creative. Here's what I have so far:

    Turkey Breast cooked in my new oiless turkey cooker.
    Smoked whole turkey.
    Smoked pork ternderloin.
    Smoked rib roast.
    Oyster cornbread dressing.
    And a ton of sides!

    I'm just bringing a few things to the family get together. This is what I have so far. Thinking of doing a heart of palm 5 ways as well if I can source it but been having probs finding fresh one.

    Vanilla Scented Pumpkin and Butternut Squash "Veloute"
    Chestnut Flan, Toasted Oats,
    Whipped Italian Honey

    "Garden"
    Long radishes in "soil" with herb cream base in table size flower pot.

    "Smoke"
    Glace a' la Vanilla
    honey glazed cranberries, candied pistashios, encased in hickory smoke.

    Yuzu Jellies

    Saigon Cinnamon Sugar Cookies & Lavender Vanilla Sugar Cookies served with a shot of warm cream, armagnac, and siagon cinnamon.

    For the past few year I've cooked a complete Thanksgiving Dinner for a friend/co-worker as his wife is a vegetarian and just opens cans and reheats. Just found out that he's having a couple of the Washington Redskin's players over tomorrow. It will be sort of cool to get their feedback. Here's the menu.

    Cajun injected Turkey cooked in my new oiless Turkey Fryer
    Cornbread/Dirty Rice Dressing
    Giblet Gravy
    Fresh Cranberry Sauce with Walnuts
    Various other sides
    For Starters: Jalapeno Poppers and Smoked Hot Wings

    Time to start cooking!

    Traditional dinner here. I bought all the stuff and my friend will make it...at least I hope she does as I plan on watching football during that time. :D My favorite dinner of the year by far.

    Traditional turkey cooked in the oven. I tried deep frying it a couple of years ago but it dried out. It is just too tough to regulate/check it. I am getting a few sides made from a catering company. We'll see how that turns out. My Mom is in town so that means my wife is in a bad mood. Time to hit the scotch!
