So I did a little research. Indeed the option does not show up on the regular option sheet for the 812 GTS. For the 458 Speciale A, 488 (Pista) Spider and F8 Spider this option was on the regular option sheet and was called 'Carbon Fibre B Pillar' with option code 'CERF'. Maybe the latter can help in finding the part on the 812 GTS.

Quick update….my SA is in Italy and hasn’t gotten back to me with any more details regarding this unusual option. I will update everyone when I have more information.
I am not sure why you would want it to be honest. The 599 had the same part to give the look of a window to make the glass area look bigger, the same in the F12, the 812 superfast, it was more trasparent in these cars which I think would have looked better on the GTS. I think it looks odd in Carbon, if you could get the top black cap in Carbon as well then maybe, but there is no other carbon near it. It may look better when you see the car in person though? It’s different over here, I asked my dealers in the UK and at both dealerships they said they had not heard of this. You could always order the cill kick plate as standard and get your dealer to fit it after it has been delivered. But I agree it would be better if Ferrari would let you do this from new.

I have both colours. Verde Scuro on a Mondial 3.2 Coupe and Verde Zeltweg on 812 SF. My 812 GTS will get the Alpina Green. For the GTS I prefer Verde Scuro as it isn't as dark as Verde Zeltweg. Anybody know how much Blu Hembery paint costs? I'd love to see it on an 812 Competizione or 812 Competizione Aperta. Any answer appreciated.
It's a triple layer extra-range colour. Expect it to be in the 30k range. Definitely some Competizione (A)s will be painted in the colour, Atelier and Tailor Made consultants seem to recommend the colour a lot lately.
