I've just been told I need to have the Thermocouple CPU's replaced. What should these cost? This is for a Mondial T, anyone have an idea?

the CAT ECU fails way more often than the CAT overheats.

My thoughts exactly. When the "warning" system is far more problematic than the very system it's monitoring combined with the fact they are 3-4 hundred bucks a side ? Get rid of them, your engine ecu's won't know the difference. If you are really keen on monitoring your exhaust temps you can purchase a very nice dual EGT guage with probes for less than the cost of replacing one original Ferrari cat temp ecu. Just my opinion I may be wrong. I'm referring to the Mondial/348 system.
