Thermostat rating

OK I just got back from a 100 mile criuse in this 93* weather. Most of it was country roads at between 40-60MPH so always ran around the 3K range. Had the AC on and just enjoyed the view of the horse farms up here. So both water temp and oil temp wer running around 175* or the 1st notch on each gage. Came into some small towns and temp went up to between the 1st notch and 195* but as soon as I was on the open road the temp went back down to the 170* mark. So my car has always ran in this range and I was wondering if there are a 180* or a 190* thermostat. Does anyone know what range thermostats are available. I'm just tring to get info because as you can imagine there is no need for me to open this up to check the value of the one I have in the motor today. Just asking.
