    Look what I found at the Meeting Street Piggly-Wiggly (a grocery store in a .....transitional part of town between the College of Charleston and somewhat.... challenged... neighborhoods) in Charleston today.

    I only had my cell camera so allow me to translate the ingredients:

    Pork skins

    Pork snouts

    Pork spleens

    Pork stock

    Pork livers

    Rice

    Pork Head Meat

    Pork tongues

    Pork ears

    Pork kidneys

    Pork hearts

    Salt

    Dehydrated onion

    Sage

    Black pepper

    Sodium Acetate

    Red pepper

    Sugar

    Natural Flavorings

    Sodium nitrate

    Salt and spices.

    My question: Why in the world would they put sugar in that knowing that diabetes is epidemic in the local population around the Meeting Street Pig??

    You never know, it might be OK. My grandparents used to butcher their own beef and pork and would make head cheese. It sounds nasty but actually isn't too bad.

    I assume you have seen "whole hog" sausage? That is actually very tasty. Everything but the premium cuts like butterfly chops is ground up.

    Probably pretty easy to prepare...heave one porker into the blender and have it squeezed out into a tube container like play-dough.
