There's probably not really a perfect 100% accurate/complete table of tightening torques in existance for any F model ;), but I believe each/most F WSMs have a "Tightening Torques" Section -- are you trying this sans 308GT4 WSM?
One thing to mind is that the cam cap numbering not only indicates position but also orientation -- put the matching stamped numbers on the same side (almost unfortunately, they are made well enough to put on backwards, but might not form a proper round bore).

You'll find a complete set of metric & english torque specs in:

    http://ferrari.jenkins.org/books/328_tech.pdf

While it's a 328 book, the torques apply to all of the 3x8 series.
Another good resource are the mondial & gt4 FSMs in the same location.

IMHO there's no need to replace the cam cap nuts as the torque on them is pretty light(6.5 ft-lbs).

A torque tip: Ferrari is very consistent in using the same torque for a particular size& pitch fastener. If you can't find a spec for something, lookup a similar fastener & use that torque.
