Top Replacement - 96 355

My top is to be replaced on an insurance claim, and there is a fair bit of inexperience at both the insurer and shop. I have searched posts and web and can't find the information.
1. Ricambi carries a top at 2,700, which is about twice what I have seen from others. The original spec appears to be a slightly different material, and would be preferable to aftermarket. Any reliable information on this subject.
2. Robbins specifies 8 hours labour for a 348, but could find nothing on a 355. Is there a standard hour amount?
3. No shop in town has done a Ferrari, and one asked if I could find a guide or shop manual. The shop manuals I have seen do not deal with fabric, only the hydraulics. For a shop to ask for this is encouraging; rather have them ask, than have them bluff their way through. Any detailed guide for fabric replacement?
