When wiring directly into the relay terminals to bypass the white connectors, what is the terminal on the relay that should be used. It appears it is either the 87 or 30 post on the relay.

They weren't consistent -- sometimes it's 30 and sometimes it's 87 (and they often make a labeling mistake on the schematic and switch the two around so best to confirm directly) -- which are you interested in?

Remove the relay and measure the voltage on the 30 and 87 female terminals in the relay socket relative to ground (when you've got the conditions such that the thing the relay is controlling should be "on") -- the one that is not at +12V is the one that goes to the wire leaving the white connectors (and the other one should be at +12V).

    Which ones are you doing?

If they're ones that I've looked at in the past, I'll have the info in my notes (otherwise, I only have the schematic which I wouldn't trust without confirming).

According to Bosch, 30 is power into the relay from the battery, 87 is the switched power to the consumer. However with Ferrari's your milage may vary.
