I am about to do my first track day in a 488 Spider on standard Pirelli's.
Ferrari recommends 2.1 Bar street tire pressures (about 30.5 lbs).
I know everyone has their own ideas about tire pressures, but I would like
to hear other opinions on cold and hot tire pressures to use initially.
My experience on previous track days in other cars is to make changes
to pressures according to the car's handling and feel. What I am asking
is recommendations for pressures to start with.

with Semi-Slicks you need a other pressure, not with normal tires.

Also standard Pirelli's are not that stable on a fast trackday ... beware ...

Context: I put thousands of track miles on my 458 on Michelin PSSs, and thousands of track miles on my 650S on Pirelli P-Zero Trofeo Rs.

OP, I suggest you go out for a few hot laps, but keep it at 7/10ths or less, then come in when the tires are all warmed up, and check the tire pressures on all four corners. You should not be over 35psi on any corner--if you are, let some air out to get the hot temperatures under 35psi. In general, running in the 30-34psi range should be fine.

By way of reference, on the Trofeo Rs I would end up letting out almost 10psi from all 4 wheels to keep them under 35psi hot.

I also concur that the standard P-Zeros are not ideal for track use. I plan to swap them for Trofeo Rs or Michelin Pilot Sport Cup 2s as soon as I get through my OEM set.

I ordered my 488 and I specified and confirmed a few times that I
want Michelins. It still came with Pirelli's from the factory. All I can
do is do the change when these tires wear out. All my other cars
    have Michelin PS2.

And what does the dealer say to you ? Was there no exchange possible ? Fault was on him or the Factory ?

Deflate the tyres by 200 or 300g; they should be at, or slightly below the recommended pressure when hot (whereas for road use, the recommended pressure is for cold tyres).
Keeping the recommended pressure on track you'd get overinflated tyres when hot and the car would slip a lot more.

Trofeo Rs are outstanding on track. I start them at 25 cold to get them to under 35 hot but they stick very well and remain predictable.

The new P Zero is an excellent tyre. The Corsa version is fantastic at the track as well.
