    This sounded SO gross, I just had to make one with mild salsa on top! A small can of white albacore tuna (pan grilled first with pepper and garlic) and three eggs. I should have added bell peppers and shrooms. Very yummy!

    One way is to put (just) a little crushed ice under the eggs in the pan and steam them.

    Oh Great! Now we'll have a bunch of guys in the kitchen cooking omelets! OK...If the pan is too hot, the omelet will burn befor the eggs get a chance to cook. Medium to medium high is OK. Three eggs works for the average omelet with about three tablespoons of water. A saute pan or similar is the best with real butter for the taste and ease of flipping. Make sure you add the cheese right before folding the omelet over.

    I'll have to try Darth's suggestion of adding the ice to the pan.
