    What model Ferrari Nick.
    For importation try:
Your vehicle | NZ Transport Agency
NZ is one of the easier countries in the world to register a vehicle, as long as you follow the rules. You can virtually get anything registered. Duties also are reasonable.

Nick, the 512 is worth taking, however with the 400 & 412 you may well find it cheaper to sell them in the UK and buy similar in NZ. I presume the 400 is not a 400SA.
Taking 3 cars means 2 containers, unless you are willing to piggy back one car on top of the other. Also GST (VAT) x 3 and insurance x 3 and other import and wharf charges x 3.
    Gets quite expensive.

If you are emigrating to NZ you do not have to pay any GST on your vehicle ( think concessionary entry only applies to one vehicle).

Otherwise, you pay gst on the value of the car + shipping. GST here is 15%. SO if the car is worth 100k and shipping is about 3k you pay gst on 103k.

then there are a few other misc charges like marine insurance etc not amounting to more than 1-2k max

Though with regard to selling in the uk and buying another here; although it may be a fiscally prudent idea the range of cars here that come up for sale is quite limited. But for most ferrari's it is cheaper to buy in the uk and ship over here due to the good exchange rate

There are also some import rules that must be adhered to (though not if you are emigrating and its your personal vehicle) - but i think if its more than one then the others must adhere to the rules and you must pay gst

emission standards; cannot import a car that is less than a euro 4 at the moment unless you go through non convential channels; i.e register your car as a special interest vehicle of which limited permits are given and you can only get 1 per person - that could prove problematic if bringing in a lot of older models (even cars like 430s except the scud are euro 3 emissions and thus cannot be freely imported)

are a few other requirements (i,.e frontal impact standards) but that's probably the only one youll have to watch out for.

registering is extremely easy here as others above have said.
