    I have a factory tour scheduled for September. Anyone have a recommendation on how to spend the day in and around Marinello? The owners tour is scheduled for 10 am.

    Wife found a local dairy co-op that offers tours with samples of Parmiagiana. Pretty fascinating. No waste whatsoever...they use the excess/runoff to make Ricotta.
    If memory serves, each wheel is about €3000. Goes up when aged 3-4 years...

    Note to self: do not visit that dairy co-op. There’s something about parmesan cheese that I can’t stand.

    That being said, take that Ricotta, shove it in a nice cannolo shell...delicious!

    Fred, very cool. I visited that place as well. VERY enjoyable...especially the tasting at the end of the tour.

    I also visited with Guisti Balsamico and Pavoratti's house.

    Maranello is a pretty Italian town. Then there's the hills above Maranello where they do some test driving. A few Trattorias up there and a nice drive.
