Made a big pot of Chili today to put up in the freezer. I'm sure everyone has their own go to recipe but I did something different. I used poblano peppers instead of the usual green ones. I also used refried black beans as a thickener. Finally I threw in some Chipotle Peppers in Adobo for my spice vs my usual chili powder. Very please with the new direction this took. That looks awesome! Our favorite restaurant’s food here looks much the same, and I expect that that there is the real McCoy-traditional fare, just as did and was the lunch food shared with me over the span of my career, and at their parties, by various coworkers from Catoula, and Congregación Mexico. Great find!
It was. Simple meal, not too much, not too little. We were in and out for $13. Nice mom and pop Mexican joint. The kind we're blessed to have a profusion of around these parts...T
