I am restoring my 330 gt and just recently sent my 40 DCZ/6 webers to Harry Beiker in Grants Pass, Oregon. I had Harry do my 356 speedster 32 pb carbs about 16 years ago when he was in Burbank, Ca. He did an amazing job. They are still running well and have not been touched!
I believe that he has quoted me $600 per carb. This was quite better than others in calif. that I had contacted. According to Harry, he does many webers now, mainly 911 carbs. He did say that he is doing a set of ferrari webers for Tilliack ltd. at the moment.

You could always DIY. Webers are simple, but very finicky - all those tiny channels need to be perfectly clean. If you get a good resource book and take your time, you can do it yourself AND learn a heck of a lot about them and how they work. Makes troubleshooting and tuning easier later.

It's purely personal preference though. I like the DIY approach as I want to know how things work. I am sure however that if you put a reasonable value on your time (say $30 an hour) it'll end up more expensive than getting a shop to do it.

Like most others, I use Pierce Manifolds in Gilroy, CA to restore my Weber carbs. If you have warped bases, etc., then you'll to send them to someone like Pierce Manifolds. If you just to clean them up, replace some gaskets, seats, etc., then you can probably do it yourself if you know to set them up.
