What to do in/near Jerez de la Frontera...

I'm going to be visiting family near Jerez with my wife in the beginning of April. I know the track is there, and would love to stop by to see testing or racing if it is at all possible, but I don't have a 'connection' to racing there. I have ten days, and although I have been to other parts of Europe on several occasions, have never been to Spain before... can anyone give me a heads up on some must-see and must-do things while there?

We've been planning beach time in Spain, a visit to Portugal, and a day-trip to Morocco, but have heard some not-so-positive things from a friend who has been to Morocco (and nearly didn't come back!)...

Any suggestions are gratefully accepted!
