    Ribs on the Big Green Egg! And a roast. The roast will be for a different day, just going to cook it with the ribs, then refrigerate and slice for some roast beef sandwiches.

    Cooked a spatchcock chicken yesterday.

    I grilled up my espresso based dry rubbed steak and chicken, grilled corn, sous vide asparagus, compressed melons tossed in lemon oil w/ frozen olive oil cake and cucumber sorbet as a palate cleanser, macerated blueberries w/vanilla pancakes and fresh vanilla ice cream, and some double chocolate chunk cookies for desert.

    I made braised buffalo short ribs along with smoked south Texas antelope ribs. The buffalo was fantastic! The antelope, not so much...had a very strange aftertaste that I did not care for at all. Not sure if it was the "gamey" taste coming through but won't be making those again. Too bad because they cooked so nicely...

    I smoked 3 slabs of baby back ribs.

    Finished them with a bourbon glaze.

    Grilled corn on the cob, and Key lime squares for desert.

    The boys had ribs in their school lunch bags today.
