    Matcha mint smoothies! 2 5 oz cups of Greek yogurt. Mint juice. Tsp of matcha powder. Three big strawberries. Cranberry juice. Protein powder. Blitz with a stick blender.

    Mint juice = a whole mess of mint leaves. It grows like a weed down here. Clean. Add leaves to water. Puree with a stick blender. Filter out the solids, and chuck those onto the compost pile.

    My new technique for making bacon (literally, not euphamistically! :D)

    Take previously saved bacon grease (yes, I save bacon grease; never know when you're going to have to finish off a reverse seared steak!), put in a skillet and melt.
    I like my 10" Lodge for this task.
    Should be enough grease when melted to cover the bacon strips. Cut 2 strips into quarters = 8 pieces. Dunk the bacon pieces into the melted fat.
    Cook slowly on low - medium heat until they start to crisp up.
    Takes longer this way, but less prone to overcooking, especially as the missus likes her bacon extra cripsy.
    Save the grease in a container, put in fridge, until next usage.

    Final product. Perfectly cooked w/o being overly charred.
    The wife and terrier both approve.

    Flew back home after 3 weeks in Europe...so of course I'm jet-lagged and waking up at 5am searching for open breakfast spots. Went to this family owned place for a great breakfast yesterday. The omelet had mushrooms, ham, green chilies and cheese (pictured here in its pre-cholula-covering state).

    I went to the gym at 8 this morning, which I never do. So I decided to get a sausage egg and cheese mcmuffin from Mickey-D's. With a hash brown and a coke.

    It was worth it.

    Happy to be back in the Rockies for the summer. Breakfast today with eggs from my neighbor’s chickens scrambled with chicken and green chile and topped with some cheese and cholula and tortillas.

    Found yet another nearby house that sells eggs. This place looks like the perfect, sketchy, Whisky-Tango place to find such things (picture every mechanized vehicle the family generations' ever owned strewn about the land, rusting in place). I went to the front porch were there was a sign saying "Eggs $3 for 18" and a small fridge on the porch...but it was broken and full of crap and dirt...no eggs. So, I was about to walk away when a little cute girl of perhaps 6 years of age came to the door and looked at me. She nodded when I asked if they had eggs and ran off, presumably to get some. And, she did eventually come back with 18 beautiful eggs. The whole experience was pretty cool, in the small ranching town way that I love.

    Anyways, the eggs were amazing. The yokes were so orange and very, very thick and goey. They have little in common with store bought eggs. They scramble into a soft consistency that I add chives to for the last few seconds of cooking and serve on top of a piece of toast (learned that from the kiwis, who I presume got it from the English).

    (the intense yellow color in the pic is after scrambling with some milk mixed in. If you go with no dairy and solely the eggs, the color is crazy)

    So, Jason, how are their donuts? I have seen a few around these parts. Never been.

    I will need separate assessments for yeast (wife loves them, I hate them) & cake (wife hates them, I love them) donuts.

    Honestly, for me there are no other donut shops (except for the Donut Wheel in Huntsville, TX that I could get 4 jalapeno cheese kolaches and a milk for like $4 in college), but their glazed donuts are the best imo. I had a jalapeno and cheese today and I don't remember the last time I had one, but it was good and it had literal fresh jalapenos chopped inside.

    I worked at a radio station many years ago and Shiply's was an advertiser.

    Once a week, they would bring a couple of dozen doughnuts to the station.

    Best Blueberry cake doughnuts I've ever had!

    When I lived in Memphis, I was introduced to the cake donut.
    Yummy! I prefer them by a wide margin to yeast donuts.

    Best pancake recipe ever!
    1.5C flour
    3.5tsp baking powder
    1tsp salt
    1tbsp sugar
    1 egg
    3tbsp melted butter
    1.75C or so milk

    Sift dry ingredients together a few times
    Make a well add wet and mix
    Fry pan with butter

    Yummy looking. We used to have a small 17" travel trailer, and I think my favorite part of camping was breakfast over a fire - eggs, toast, bacon, etc.

    Had this very interesting lemon ricotta cheese from Costco. Tasted good by itself as a dessert. Thought it would be good added to pancakes. So, one cup of pancake flour, about half cup of almond flour, egg, vanilla extract, a pat of melted butter. Add water & whisk until it's the consistency you like.

    They were a bit crumbly and this tough to flip. Maybe needed a second egg with the addition of the almond flour? So, gotta make sure there's a good crust before flipping.
