Let me share the recipe for my breakfast today Mung bean pancake Ingredients: 1 cup mung beans (soaked overnight) 1/2 cup water 1/2 teaspoon salt 1/4 cup chopped green onions 1/4 cup chopped cilantro 1/4 cup chopped onion 1/4 cup chopped carrots (optional) Cooking oil for frying Instructions: Rinse the soaked mung beans thoroughly and drain. In a blender, combine the mung beans, water, and salt. Blend until you get a smooth batter consistency. Pour the batter into a mixing bowl and add chopped green onions, cilantro, onion, and carrots if using. Mix well to combine. Heat a non-stick skillet or frying pan over medium heat and add a little cooking oil to coat the bottom. Once the pan is hot, pour a ladleful of the batter onto the skillet and spread it out into a thin pancake. Cook the pancake for 2-3 minutes on each side, or until it's golden brown and crispy. Repeat the process with the remaining batter, adding more oil to the pan as needed. Once all the pancakes are cooked, serve them hot with your favorite dipping sauce or enjoy them plain! one of the best breakfasts we have made at home...huevos rancheros. Mixed chorizo with beans and ranchero sauce... Then laid down a couple of fried tortillas, topped with the sauce/beans/chorizo, then some more ranchero sauce and cheese...then eggs and cilantro, green onion, some salsa and a bit more ranchero sauce. Took my client visiting their plant near Montgomery to his first NASCAR race. I flew in last night. Missed dinner as lightning grounded my plane and I sat in IAH for 3+ hours. Not much open late Sunday after the race. Chili’s was barely edible. My last visit dates back 12 - 15 years when I looked at the tower for WVTM, the local NBC station. Field engineer took me to The Golden Rule. Amazing brisket for a chain.
