    Finally, got brave enough to try frying an egg on my Lodge carbon steel skillet after many rounds of breakfast bacon for the wife. Came off easy with a little bacon grease lubricant. Kept temp high to help with release. The egg would be too "burnt" for the missus, but was perfect for me. Served with a veggie sausage patty. Oh yeah, plus a lot of green Tabasco hot sauce!

    Not enough eggs! Eggs hold them together

    Try
    1 cup milk
    1 cup water
    6 eggs
    Pinch of salt
    1 big heaping cup flour (probably 1.5 cups I just eyeball it)
    Tsp vanilla extract
    1-4 tablespoon sugar (to taste)
    Blend/mix high speed
    Stick of butter melted, or, 1/3 cup of vegetable oil mixed in

    Let sit until mixing bubbles disappear.

    Coat hot stick free pan by rubbing butter on every square inch and pour a ladle of mix in while hand swirling. After 1-2 mins if you shake the pan back and forth the crepe should be loose. Grab with fingers and flip (no spatula). Lots of eggs and flipping by hand after loose is the key.

    I wimped out on crepes in my new Matfer pan, but after a nice early morning drive in the Cali, I got a hankering for pancakes. Cioccolatto! To match the Cali interior.

    Pancake mix, 2 eggs, cuppa milk. And, a tablespoon of 100%
    Valhrona cocoa powder.

    Ulterior motive? I was feeling cocky with the seasoning on my Matfer. She worked like a champ. No sticking. Easy cleanup. I use a two pan setup. Matfer = hot. For searing the flapjacks. One minute per side. Then a second pan at lower temps to finish cooking the interior.

    Finished product with a little buttah. Maple syrup (thank you our Canadian buddies!). And, a little powdered sugar - long story, short - makes it look festive and reminds me of grandma.

    Getting cocky with the Matfer. Scrambled eggs this a.m. I'm declaring victory! Cleaned up with a paper towel. Tried a few seasoning methods, and found the "make the wife bacon for breakfast almost every day for 2 months" works the best.

    Old trick from college days for egg mcmuffins at home;

    Put the raw egg in a coffee cup and microwave it. Cooks fast and comes out muffin shaped and sized :)

    Scramble it with salt and pepper before nuking. Tends to puff up when nuked, so gotta watch to avoid that.

    Had my first Buc-ee's egg, potato, and cheese burrito. It was real good. Whataburger also makes excellent Taquitos.

    Shush. Don't tell people about Whataburger. The state is already overrun with enough carpet baggers! Just stick with the company line - the summers are really hot, you wouldn't enjoy it.

    Very well done! Gaylord Texan is across the street. There are a few good, hole-in-the-wall Mexican joints in that neighborhood. And, some good (for Texas) Italian joints, including a place appropriately named Ferrari's! Safe travels.

    Yup. And, it must be said, if you want to get something that doesn't leave you saying "meh"; get the animal style double double

    (Non animal style is nothing special. Single meat patty is the wrong proportions to make a good burger).
