Pot roast was ok but probably should have cooked longer. Everyone was getting impatient and hungry. Tasted good was just a bit chewy. Cooked carrots and parsnips with the meat. Yumm.
Big pot of spaghetti ! 15 gallons worth! 25 pounds of ground beef, 20 pounds of italian sausage, drained the grease, added lots of tomato sauce, diced tomatoes, tomato paste, tomatoes, roasted red peppers, spices, etc.. Fun afternoon - cooked about 8 hours and reduced down 6 gallons from the beginning! Thanks. That's her "Whatcha eating?" look. It's an easy and tasty homemade dinner after a long day. I find they work better if you cook the tortillas for about 5-10 mins to crisp them up before putting on sauce and toppings. Around 400 F. Also, keep tomato sauce to a minimum, to avoid making the tortilla soggy. About 5-10 min depending on how you like your mozz cooked. T

^ Primo crust on the salmon cakes, Davide! Recipe? I never seem to add enough binder, and when I make fish cakes @ home, they don't hold up very well upon frying or, especially, on the grill. For a good sauce, I would suggest, a nice blueberry chipotle ketchup. I have used this recipe. https://www.saveur.com/article/recipes/blueberry-chipotle-ketchup albeit with a lot less sugar than called for. You can also adjust the amount of blueberries and chipotle to get the right balance of sweet to heat that you like...T
