Ok, a little catch up (we were on the road from WY to AZ for our annual flight south, so no time for posting pics lately). Ania discovered Clam Chowder recently...so she had to make it at home. Was pretty darn good! (she made some crouton as well). We doubled the clams over the amount called for in the recipe and it still wasn't near enough. Next time we 4x it and put large whole ones. Next up, two new discoveries, combined into one dish. I introduced her to a "Fried Green tomato BLT" recently (super yummy at a local diner) and she saw tomatillos in the market and asked what they were and what we could do with them. She then came up with Fried Green Tomatillos. She also made a Chipotle Aioli dipping sauce. The sauce was good, the fried green tomatillos were odd (being honest, not something I would make again). A fun part of leaving for the winter is successfully cleaning out the fridge without throwing anything out. So the last few meals are always a mismash. On our drive between AZ and WY each spring and fall, there is a little town of Kanab, Utah that we pass thru that happens to have two excellent restaurants. Last night I made a bacon cheeseburger. Used the Kirkland Angus beef patties. With the big mac sauce it was pretty good. Tonight is pesto night. adding some scallops and shrimp.
I've got some sort of crud/cold so bought some soup the other night on the way home from work. Too lazy to make my own but Progresso creamy tomato with Penne was pretty good. Had Minestrone last night. Tonight it's a burger/dog cookout/potluck at work. Should be lots of food. Happy Halloween!!!

I'm surprised Vancouver doesn't have Mexican restaurants. Mexico is close as a vacation destination. Most of the farm labor here is now Mexican. So you'd think we'd see at least a taco truck or something. Eastern Washington State has a massive Mexican population, so they have several decent Mexican restaurants there. Several taco trucks as well...………… I forget to get Mexican when there though.
Tonight Ania made dinner (I sat on my ass and watched football) and came up with Cous Cous “Tabbouleh” and Sauteed Yellow Squash Tagliatelle (I say Pappardelle) with evoo, tomatoes and garlic.
