    When I was young and poor, we had chicken soup for colds. Now that we're Ferrari owners, duck soup!

    I cooked a duck over the holidays. Rotisserie. Over charcoal with some oak. Ate some, froze the remainder. Saved the jus that went into the drip pan.

    Boiling the bones tonight for duck stock.

    Start of the soup. The Cajun trinity. Spices. Chuck in some of the duck wings & duck jus for flavor. Need to add the aforementioned stock once it's done.

    If you want a best buddy, duck is the quickest way to win over the Princess.


    Will finish up with a handful of wild rice to fortify it.

    On dairy, we had a doc when I was a kid who told my Mom that nobody should drink milk past the age of about 3 or 4. At all. Of course that went against all conventional wisdom back in the 70's. It actually goes against most conventional wisdom now. Dairy basically isn't very good for you. I don't hardly ever buy or drink milk. Cheese once in awhile but that's about it. I have asthma and any dairy does not help it at all.

    But back to food, for some reason while at the store last night a bologna sammich sounded really good. So I bought some good multi-grain bread and bologna and had a sammich. Haven't had one of those in a LONG time.

    I added some chicken broth and a can of albacore to my mashed potatoes I had frozen last week for a creamy potato chicken bacon tuna soup, lol. It’s really quite good, or maybe I just think its good, being so hungry.

    I don't drink milk unless its chocolate. Never liked regular milk. I do eat eggs for breakfast. Lots of cheeses as well. My dad and brother came over for some boxing last night. So I did an easy pesto linguine to feed us. Didn't feel like driving up to get pizza. Nobody delivers to my house, its too far in the sticks.

    My truck is registered and insured to my company. So its supposed to be business use only. I picked up a 1996 Mercedes S320 to due daily driving non business use stuff. Taking it too a Mercedes guy for some work today. Out in Surrey. On the way home I'll hit my favorite hole in the wall diner for dinner. The area the restaurant is in has become really bad. If I could legally carry a gun---I would in this area. But the food is awesome.

    Almost exclusively chuck roast cubed up. Sometimes if I'm feeling lazy or in a rush, ground beef.

    If you want to make it a bit easier, cut the chuck into big chunks. Let it simmer for an hour or so in the chili seasonings and such. Then take meat out, cube it, throw it back in and finish simmering. It's much less work cutting the meat up after its been braising for a while.

    After our exchange of earlier in the week, I gotta a hankering for a dark and stormy. So, stopped at the liquor store on the way to Kroger.

    Figured I’d get some grief over this! Considering the weather here think it’s ok. Stove top for light browning fist then cooked/baked for 3.5 hours.

    LOL. We went a similar route. I pan grilled some tuna from Costco for tuna fish sandwiches.
    And, it was about 2 PM when we ate. So, dinner was a bowl of leftover duck soup. We had dark
    & stormies instead of champagne!

    The HEB. $7 for 2lbs I believe. I'm probably off.

    They were actually cut into two steaks so it made cutting them easier. Going to do about an hour and half on high and then put it on low.

    After a long day at Barrett Jackson, needed a quick and simple dinner...seared some blackened Ahi and served it over an “off the cob” elote. This was so easy, quick and yummy!

    Picked up some ginger beer today, Reed's is the brand. But had to get a contract signed by my sellers tonight, and then by the time I left the office I needed some beer to go with the chili. So I won't be trying it tonight.

    Chili came out okay. I will definitely not ever buy and prepare the day of again though. It needs a day or two of marinading in the spices. Even in the crockpot it didn't penetrate the meat at all.
