Ah the South....live in a small oil patch/farm town of 13,000. The bohemian 4 course meal- chicken fried steak, German potatoes, green beans and a slice of white bread.

Tom. I grew up on the Island so I prefer NY style pizza. **** I never knew you could put anything on a pie til I went away to school. Learned quickly u needed double anchovy and shrooms to make them pseudopizzas edible.

Truth be known all u need is a hot floor for a good pie. If you get a heavy stone and get it hot through and through (not just when the oven gets up to temp) it’ll make a good crust. Wood ovens are designed for neopolitan pizzas. Much different ball of wax- thinner, less fermented & different type of crunch crust, non cooked tomato purée v. sauce, etc. But it is kinda cool to watch the dough puff up in 30 sec though.

But get a good thick stone and heat it up for a while-you’d be surprised what a heat sink a pizza is- I checked floor temp after #6 and it went from 728 to 630 in what 15-20 min.

Very interesting; the heat sink effect was the one factoid I couldn't glean from the different pizza oven videos that I checked out. I'm guessing that the stone floor is massive, obviously much more than any pizza stone, so the loss of 100 F is impressive.

I'm from Brooklyn; when I moved away, to my mind, the biggest differences were the dough (usually too thick IMO), the sauce (too sweet) & toppings (too many). I finally gave up & just started making my own...T

    I'll watch the salt, thanks!

Had another chicken parm for dinner last night. Almost broke down and got a pizza.

Was going for a cheeseburger with my dad. A Japanese restaurant is almost next door to the burger joint. So we decided to go there instead. Had assorted sashimi, chopped scallop rolls and Philadelphia rolls. Philadelphia rolls are crab with cream cheese and smoked salmon on top. Very good.

I took my mom shopping at a USA Costco. Applebee's almost next door, so I took her there for dinner. BBQ brisket tacos. Pretty yummy! Tonight is pesto linguine, I'll just do a small portion.

Don't eat that ****. Decrease input, increase output.

So far I have lost 56# since 3/10 by eating 1 divided plate, no seconds/thirds & watching my carb intake. I start with an Adkins mindset and (have to) add carbs to round it out. Much easier on the mind to reward yourself than deny...........

Sadly, it has not made an impact on my insulin dependence, but I fit in XL down from 2XL.

Indian inspired last night. Onions, cucuzza, garlic - sweated down in olive oil, with turmeric powder, curry powder and fenugreek. Salt and pepper. Add homemade broth, red lentils and shrimp. Near end - add white rice. Cover until the lentils & rice are cooked. I like mine with a a few splashes of Tabasco habanero. And a cold glass of white wine.

Dang it. Just got back from Kroger in the Cali and now I want sweet corn! The plan is skirt steak for tonight.

Last night's meal started out inspired by this...
    https://www.cookinglight.com/recipes/sweet-potato-and-red-lentil-curry

It ended up as "I'm sick of looking at this in the fridge, pantry, garden, etc." curry.

Started off with a Pakistani style garam masala that a friend gave me. Very fragrant, not much heat...
    http://wwwpakistanihomecookingcom.blogspot.com/2013/04/normal-0-1.html?m=1

Sweat a diced onion. Ditto for celery. Red bell pepper and chard from the garden. Garlic and garlic powder. Add the masala. Chicken stock. Cubed sweet potatoes. Leftover peas. Leftover rice. Since the wife was out on the town with her gal pals, I grabbed a jalapeño from the garden, diced it up and added that. Simmer. Added a few drops of bhut jolokia hot sauce that a friend made.
