    Yep, doubled fried. Refried the shrimp and left over fries from fish n chips a few weeks, it was awesome.

    Tonight was Popeyes chicken sandwich and fries.

    How thick is the baking dish. I assume you line it with dough, fill, bake. Do you prebake the crust before filing?

    Hi Tom - made the dough from scratch, lined the 14" pan which has about a 1.5" lip, then added the toppings - cheese first, then toppings, then finally homemade sauce on top. Sprinkled grated parmesan cheese on top, and cooked in oven at 425 for 20 minutes. I was worried the center would not cook properly, but checked it with a thermometer, and it was cooked all the way through.

    The kids liked it, but I think they prefer white sauce on their pizzas, so I think I'm going to try it again using white sauce.

    "Discovered" black eyed peas when I move to the American South. Of course, the likelihood of finding them in a vegetarian dish is pretty close to zero. Typically, mixed with something pork based like smoked hocks, bacon, jowls, etc.

    BTW, that china pattern looks similar to some of the Danish china my wife picked up when she worked in Copenhagen many moons ago! Cool!

    Got ribs cooking in the insta-pot. going to finish them in the oven. I'll make Kraft Mac N Cheese as a side. I'm craving a DQ Blizzard. I might try their chocolate chip cookie dough flavor.

    Not the greatest pic but sure was delicious. Fresh gazpacho, chicken pasta salad, and baked chicken with lemon. Rain and drizzle this afternoon so no grilling today.

    Side note... our Meyer lemon tree is going crazy. Eight large lemons ready in a month or two, and a dozen or more smaller ones getting started. And tons of blooms all over it.

    Came out good. Concocted a random marinade that I want to try again, with an overnight soak.

    -Olive oil
    -Hoisin
    -Chili Paste
    -Dash of Honey
    -Cherry Juice (the drink not from the jar)
    -Sherry Vinegar
    -Lite Soy Sauce
    -Worcestershire

    I don't really recall the rub I did unfortunately.

    1st time I skipped the cream - it was better!

    3-4 eggs
    3/4 cup cheese
    That’s it.

    Take spaghetti out of boiling water with tongs or spaghetti spoon dripping wet into bacon / pancetta bowl and mix, when cooled just enough pour in egg and cheese mixture and toss. Too soon it curdles too late doesn’t cook - just right it’s creamy goodness. Then add on some of the pasta water to liking for me about 1/3 cup - later added a smidge more before seconds :)
