    Thanks Tom. I’ve seen those and figured that might be needed. It’s a little surprising that the charcoal technology hasn’t improved in over 30 years o_O

    waiting and waiting...will have to bring it to the stove top soon...

    Based on that pic, you don't have enough charcoal. In general, I fill up the larger of the chimneys (they come in 2 sizes, get the larger) most of the way with briquettes.

    Weber 22" silver is the best. I've had mine for 20+ years. Once mastered, none better.

    P.s. Don't worry about wasting charcoal. Once you're done, close the top and bottom dampers. Reuse the leftover coals next grilling. The smaller chunks light faster, almost like kindling for a fire!

    I’ll use more charcoal and the chimney next time.

    Ironically I over-cooked it tonight despite the low heat level. I had no idea what I was doing and just let it sit there...when I went to check it was somewhere beyond medium (I don’t even know how to grade done-ness after medium. Just fell it grey-ish).

    yeah, it was all done. And sure I know and use the finger test. I just didn’t think it was anywhere near time yet since the heat was so very low, so I hadn’t checked it yet. I am still surprised it cooked as fast as it did considering I could hold my hand over the coals forever.

    With the homegrowns I don’t use any vinegar at all. Just fresh oregano and Picual olive oil. (And the ubiquitous Auricchio) I’ve been obsessed with Picual ever since my hunt in Spain. With store bought I’ll use my vinegar and dried oregano.

    Do you put the slaw in the sammich or just as a side? When I lived in Memphis, slaw was a topping on a pulled pork sandwich. Then add a nice vinegar-y, spicy bbq sauce. Yumbo. Great, now I'm starving!

    We have done Tex Mex the last two nights.
    Last night, black beans and rice.

    Dry black beans. Water. Garlic powder, cilantro, cumin, salt and pepper, onion powder, a little cayenne powder. Simmer all day on low. Serve over white rice.

    I made red lentil pasta with shrimp and a jar of tomato sauce yesterday. I should have looked at the red lentil penne before I bought it. I thought it was on carb.
