    Two different marinades on chicken thighs to be grilled this afternoon.

    Italian dressing and white wine vinegar. And I added something called Salsa Guacamole.

    Coca-Cola and sherry vinegar.

    Chicken preseason with salt, pepper, garlic and onion powder. The remaining divided into each marinade.

    I've watched a few of his videos, not many. But, likely to check out more. He does more than the basic meats, and seems to be good about details like time and temp. A friend suggested chuck roast as a brisket alternative, and then Kroger had a sale, so had to give it a whirl...T

    That particular video intrigued me when I watched it but I'm just not a big fan of chuck, so im looking forward to your experiment.

    Looks tasty.

    Thus far, it's been a bear. I smoked it for 3 hours over mostly oak. Then wrapped it in butcher paper like Pitmaster X. About 2 hours ago, I smelled burning paper!
    So, I turned off the oven to deal with that, then forgot to turn oven back on. Currently, it's mid stall at 160 F and I told the wife to grill up hot dogs because this may be done past midnight! ☹️ And, I got to be up early for an important meeting tomorrow morning. Stupid chuck roast!

    Am surprised that at 3 lb each that is taking so long to cook. I went for a drive and didn't put this on until 1 pm. Big mistake.

    On the bright side, after dealing with the paper fire, I sliced off a little taste of beef for me and the assistant taste tester. Tougher than shoe leather at this temp, but taste is good, bark good. Nice smoke ring. Now have to get it tender, hopefully before morning!

    I had taste testers last week. The pup didn't really get anything but I gave some cheese to the cat. Hence why in this photo she's in my face. Lol

    I learned about the only thing that really doesnt take long to finish is the tri tip.

    I have a brisket and a tri tip in the freezer. We'll see what this week brings.

    Left over Chinese...................... My dog isn't big on food rewards. Its a common trait with German Shepherds that they like balls over food. Mine would rather get a ball over cheese or other treats.

    The pup is totally food motivated. Exorcism if it's been grilled. She's a Texas dog and loves flame kissed food, which is why we usually salt and spice stuff after the fact. It's embarrassing, you would think we starve the poor beast! For dinner tonight, she had kibble, chicken livers, pasta and a little leftover squab as an appetizer. Yes, you read that right, squab! Oh yeah, almost forgot, we moistened her kibble up with homemade chicken broth (so no salt).

    Had a mix of leftovers from our recent Dartagnan orders - veal chop, dry aged strip steak & the aforementioned squab. Two minutes per side then indirect until they hit the target internal temps.

    It's too hot here for a good chunk of the year. This time of the year she just runs out in the AM, midday and evening for a few seconds, does her business and then scoots back indoo
    That was the magic ingredient for the pup tonight. She acted like she was starving, but then nada, zilch, nothing. So, I tossed a little sliver of bacon - left over from the wife's breakfast this AM - and Katy, bar the door (in my best Keith Jackson voice!), she just about chomped my fingers off!

    We did steak and pommes frittes tonight, sans pics.
