    Those meatballs look good........................ Discovered the pizza place I get the taco pizza at has a location in a strip mall walking distance from my house. I've been going to their other location about 8 miles away. Oh well now I know.

    Not sure what I'm doing tonight. I made a seafood pita bread sandwich for lunch yesterday. I have king crab, scallops and shrimp leftover. Have a Kirkland pesto sauce in the fridge. Think I only have fettucine noodles in the pantry. But maybe I toss that all together for dinner.

    Going over ditalini. First course was iceberg lettuce salad. Appetizer was lamb lollipop chops. Bought from a local joint a few days ago. Ordered rare. Seared a few mins per side.

    Since it looks like storms all weekend, I decided the winner is brisket. Will do a dry brine tomorrow and throw it on Saturday morning.

    Even though its only 4lbs I plan to start the fire around 7.

    Depending on how the fire is at the start (mine is almost always hotter than I like), I start fat side down, then flip it once things stabilize...T

    My dad and brother are over watching UFC. Neither want Chinese food. They like my pizza idea, but they don't want a beef taco. Considering either Domino's or trying a new place that just opened near me. We are also considering getting burgers from Red Rodin on take out.

    Well, the stall lasted longer than I anticipated so I didn't wrap for like 3 hours when I should have. Took another 2.5 hours after that. Pulled at 195. Wrapped in additional foil and wrapped in a towel for an hour and a half. Friend called so it just extended the time i planned.

    After talking to him I realized I've had my grill since 2013 or 2014. It's time to upgrade, but I'll probably run this thing into the ground. The offset just doesn't work that great.

    Tastes good. On the dry side though. I know I have to add more to my salt brine.

    Your brisket looks like the flat only. It can be hard to not dry out a flat, even with wrapping. It might be worth trying a whole packer, tends to be moister due to a larger fat cap plus you have the point. If it's too much beef, just give away some to friends!
