Last night was sushi/sashimi combo meal. Comes with salad, miso soup, tempura and California rolls. Ordered extra. Got a scallop cone and Fantastic rolls. They also had scallops in them. It was too much food. A new to me place. They had a deal spend $50 and get 20% off.

Tonight I'm stealing ground beef from Bella. Have some bacon. Making homemade bacon cheeseburger.

If you like spicy, try jalapeño bacon, Max. I know Hormel ain't the fanciest brand, but I bought this

on a whim. Cooked it in the oven at 400 F on a rack so the fat could render off. Yummy.

Tonight. Experiment number two on the microwave fish front. Got a tilapia filet at Kroger. Fresh cracked black pepper. Kosher salt. Lime slices. A few small tabs of butter. Harissa. Cover. Zap for 3.5". Let rest a while and inspect for doneness. Zap 2" more. Rest.

I look for that bacon in the states. Don't think they have jalapeno bacon here. We do have ketchup potato chips, so there is that!

I got to spend a lot of time with Jim's GF, Eve Babitz. One of the L.A. folks I truly miss.

Need to remember to have a friend say "Hey" to her and the Ruscha brothers, in particular.

    Sure.

Smoke at 250F for 3 to 3.5 hours depending on tenderness.

The first hour is just the seasoned meat (pick a google recipe) and onions. The second hour I add an 8oz can of tomato sauce that ive mixed with broth (your choice).

I basically consider it like doing it in the crock pot just on the smoker instead. I added a tad bit too much salt this time.

Ended up having Burger King. I was out and forgot my vaccine passport needed to dine in at restaurants. Hungry and the closest easiest fast food place was Burger King. Whopper, onion rings and med coke for $7.40 is a deal that can't be beat.

Made a vegetable beef soup on Sunday or Monday and have been eating leftovers of that. Almost gone. Also threw together stuffed poblanos again the other day. Gonna have to figure out what to make tomorrow or Saturday at the latest.

I made fajitas a little while back but replaced the bell peppers with poblano peppers. Have to cook the poblanos more than a bell pepper, so they're not tough and fibrous. But, it's a good alternativeto stuffing them, which I find to be a chore. I have tried it with both chicken and beef...T

Do you think it would be helpful to "torch" the outer membrane of the poblano before it hits the skillet?

Yes. If it were warmer, I'd have done that on the gasser. I have seen folks use their stove burners, but that would definitely get a penalty flag thrown by the wife!

Got the French ladies out to do my skillet work!
