We made prime rib for Christmas yesterday (technically only Choice grade). We like it cooked closer to a medium and it came out perfect. Green beans, Yorkshire pudding, and a salad. Prime rib for Christmas dinner. I only ate the meat with no sides. Had pumpkin pie too. Now have to get buns for tonight's prime rib beef dip with the left over's. I'm also making a turkey because my nephew and SIL don't like prime rib.
I didn't get prime rib, standing rib roast or beef of any sort on Christmas, and seeing all these posts here of your Christmas Dinners...well, I needed some beef... Tried to create a steakhouse menu of Filet Mignon, Sautéed Mushrooms and Creamed Spinach...cooked all of it in one cast iron pan, which was a lot of fun and did the job very well (I think after many years I finally have a decent seasoning on my cast iron). I forgot to snap a pic of the beef when it was in the cast iron to start, but did get one after it finished in the oven while I cooked the mushrooms and then the spinach. Was all yummy. I think I'll add a Wedge Salad as a starter and make this meal when we have dinner guests. What is the quintessential steakhouse dessert that we should add to that menu? I miss the Keys. It’s been a long time. Think it was Marathon where I went out scuba diving. Seeing Barracuda cruise by and disappear was amazing.
Nothing picture worthy. Last night fried chicken and potato wedges from Safeway. The other night bacon cheeseburger and onion rings at Fatburger. Tonight I'm thinking of Chinese takeout again. Even though we had it for Christmas Eve last week. Other than pizza, it is the easiest takeout to feed four people.
Snowy afternoon, so what better to do than fire up the smoker for a couple of hours! Did a Beer-Can Chicken, with roasted butternut squash puree and sautéed green beans. Used a rub we got at our local butcher and I used cherry wood pellets for the first time. Delicious!
