    Thinking the same here as we anticipate first snow here in Raleigh in over 1,000 days. Sleet, freezing rain screams for red sauce...Italian sausage and ricotta ravioli. Chianti Classico and Bob's Your Uncle.

    I used to debone the trout, stuff with crab and fry in a pan. Make a sauce out of the pan juices....yum. Love trout.

    Brisket beans.
    Take some brisket trimmings. Boil in water with spices for a few hours. Let cool overnight ; then skim off the fat. In that liquid, add chili powder, a little tomato paste, S&P and simmer pre-soaked pinto beans until soft. Towards end, add the trimmings back in. Reduce until the liquid is absorbed or boiled off. Great on freshly made corn tortillas...T
