OK, we're having ribs tonight. With drinks before, during and after, of course. So what's your favorite BBQ? Pork ribs, beef ribs, brisket, whatever? And what's your favorite BBQ sauce? Off the shelf, home brew? Recipes, techniques, buying tips? Let's hear it. Emeril's getting stale. BTW, my wife cooks better than your wife.
I would probably say wild boar ribs. Emeril's pretty much a putz - his best trait is getting people interested in cooking & he is a very good entertainer. For recipes, start with the book "Dinosaur Bar-B-Que: An American Roadhouse" and modify to taste. For the actual cooking process, check out Alton Brown's "I'm just here for the food". For anyone who either cooks, or wants to cook, this is a great starting point that is one heck of a good read! BTW, I cook better than your wife...and my wife cooks about as well as I do ~~~
If you ain't eatin it in Texas, it ain't BBQ. Favorites, in no particular order: Opies, Coopers, Southside Market, and I do have to include Rudy's in there too.
First, BBQ is always pork. To my taste, the best comes from Eastern North Carolina...take your pick of places. The sauce is vinegar based.
BBQ, isn't like a all or nothing Pork kind of thing, is it? Like you can't BBQ a chicken? Or a hunk o' steer? Or whatever you want? Does it have to have BBQ sauce to qualify? I'm just wonderin' 'cause up north here just about whatever you toss on the BBQ qualifies as BBQ. Beer, of course, is not optional when cooking on the BBQ. Having said all that, I do agree that pork comes out best, and the sauce I make to do the BBQ has vinegar among its ingredients. Along with about ten other items. DM

Absolutly true, but in the South, Barbecue is a noun and it is pork...chipped or chopped served on bread...
ive been to the deep south, ive had southern cooking. Its mighty good, this is the best kind Ive had north of the mason-dixon line. The grill is auctually going right now.
Put it this way, everything tastes better with a few more benzene rings on it! My grill sees it all, all the time!
Anybody drink "Stubb's?" "My life is in these bottles." Kinda vinegary. Not bad. What about brisket? How do y'all do a brisket? (Note: Texans will be handicapped 8-10 points on this one just to level the field a bit.) Rhetorical Question: Do they really BBQ in Nawth Carolina? BBQ Fishsticks, anyone?
Can never go wrong with a nice steak. What irritates me is when people marinate nice cuts of steak. NO MARINADE! I would love to try some of these Texas sauces. Can they be ordered? I also love barbequed salmon with a whisky/maple glaze. Very easy, VERY good!
I like Stubbs. Use "Stubbs Rub" alot. I'll probably have my pickup and boots revoked when I admit this, but I don't typically enjoy brisket that much. No taste to it! Maybe I've never had one that was prepped right.
I'll have to try the brisket at a BBQ restaurant here then. Only time I eat it is when it was made by someone I know and I don't want to offend by declining to try it... and ever time I can think of that I was in that situation, I know it was cooked in somebody's kitchen oven. So are you really a "carnicero"?
My brother lived in Houston for 9 years, right next door to a guy who won several smoking contests with his brisket. He would raise a tarp over his smoker to prevent anyone from seeing what he was doing. To no surprise, my bro never got the rub recipe but he did say it was the best he ever had by far! I bought my father a smoker the last time I was there and it cost more to ship it to California (by train) than it did to buy it!!!
I think those guys are secretive for the sake of being secretive. They shroud their preparation in mystery, and doing so breeds an aura of intrigue and makes people believe that the end result is superior and magical, and everybody talks about it and wnats to know the secret. The secret is that there is no secret. Kinda like those fellers in Maranello.
Personally, I like Pork Ribs, Steak, Chicken, and just about everything bbq'd. Favourite bbq sauce has to be Tony Romas original. You can pick a three pack up at Costco every once an a while they have it. Other than that you have to go to Tony Romas.
