I beleive Ferrari started to offer Alutex trim in 2011, and this is most likely what this is on this wheel. http://www.arthomobiles.fr/Salon%20Geneve%2011/Big1/Geneve11%202411.jpg As per the colored carbon fiber, it's a colored tint / gelcoat over regular black carbon fiber. All the colors of the raibow are available.
It looks like Texalu...basically a version of carbon fiber but uses aluminum instead of carbon. Texalu has been around for at least 15 years that I can remember. I believe Ferrari started offering in for 2014 models.

I recently saw it on a white FF. In person... It looked great! Very cool. Pictures here, and in general do not communicate the beauty.
It's been said that contrast stitching on a dash is distracting, a white steering wheel has to be similar.
My red stitching on black dash is not distracting. At all. White is not sporty. Until they start putting white steering wheels on F1 cars...

I must confess I wear polarized sunglasses 90% of the time. the other 10% it is night or cloudy. white or yellow stitiching could be more problematic. Best
