    John,

I've been trying to get Quinoa going more so for my parents. They eat a fairly bad diet with deep fried this in bread etc...I prefer a nice rice bowl so when I have the time I try out "healthier" ideas for them to make. This one has been a huge hit because of two items.

    1) SUPER easy to make...like children under 10 could make this.

    2) The items like beans/corn/spices/tomato/and whatever else you want take away from the bland quinoa.

Here is the recipe I started my base with and now I add accordingly. This is my favorite quinoa dish to date.

One Pan Mexican Quinoa - Damn Delicious

Cool. That'd probably go great with a datil pepper salsa. I like using the fish basket idea. Easy to keep flipping over continually to avoid burning it. How'd it taste, Ron?...T

You should! its quite tasty for what it is. to me it tastes very good paired with a chicken breast. Used this recipe and leftover stake for a burrito. was not bad at all!

LOL. I'm down toward the capital, Lansing. I should be in town. As of now, no more travel until October for me. Hit me up about a week before you land in DFW. Travel safe...T
