Bottarga, botargo, botarga, all sorts of spellings in Italy, Sardinia, Spain, France. Its basically roe sacks from Mullet that are salt cured and then dried. Adds a great briny, caviar-esque, anchovy-esque flavor and usually a bright orange/red color.
