^Pasta carbonara? Tonight, we did little lamb t-bones. Aka lamb chops. Marinate in olive oil, lime juice, herbes de Provence, garlic powder, fresh cracked black pepper. About an hour. Fire up the 18" Weber. Two zone fire. Cast iron griddle over the fire. Ca. 600 F. Sear - 2 minutes per side. Then 5 min indirect. Final product. After 5 min rest. Serve with steamed green beans, garnished with French fried onions. T

She's reasonably tolerant on red meats. For the 5 min of indirect, those closest to the hot zone got cooked a bit more, so she had those. And, I enjoyed the rarer ones. Marriage, it's all about compromise! T
Andrew I think a piece of burlap would be your best friend for that wok. Mine is electric and I'm not sure of the material but I've never put water on it after using it. I forget exactly how I seasoned it. I think ginger and chives - It's been good. Sent from my iPhone using Tapatalk
Yup. While this isn't cast iron I think the concept is the same. I try not to wash the cast iron that I have. Last night was an exception as I put a piece of cod on it and even still I didn't put it in the dishwasher.

I haven't made this salad in years. Pulled it out today. I encourage you guys to try it: Boston lettuce green onions red peppers. Goat cheese log rolled/pressed in cranberries cut up, egged, breaded Italian crumbs, fried. Throw on paper towels to drain on salad eat while warm. Coleslaw dressing. Still in SF, ate at a little French bistro we've been to about 3 or 4 times before, Rue Lepic. Place is microscopic. Kitchen and dining room in one. Near the top of Nob Hill. Escargot. After I had snacked on a couple. Yummy. Garlicky goodness. Sweet breads. Yummy thymus! T
It was. SF is a great foodie town. I've never had sweetbreads before, and our dearest friend, who joined us for dinner is squeamish, so it seemed like the obvious choice! T
I made some Chicken Tikka Masala over brown rice tonight and it came out great. Basically it was curry brined boneless/skinless chicken breast, a bunch of different curries, paprika, rosemary garlic, onions, S/P, cilantro, shot of ketchup, tomato paste, butter, sour cream and heavy cream. My wife came home with saag paneer, garlic naan to go with it and Gulab Jamun for dessert. Bless her heart.
