I'll be eating leftover porchetta for a few days. Today I tossed some riced caulliflower in with it instead of leftover sprouts.
The onion rings are cheaters. Got them from the butcher- not much of a fan, but the wife and son like them. The wedges are just plane ol twice fried: once at 300F til brown, then crisped up at 375+. Oh and I soak them in water for 30 min beforehand to remove the starch. ps I didn't touch a fry for two years, only started to eat a couple-three (literally) this year....I think I can stop the Metformin if I wanted, but WTF it's as benign as aspirin..........
Reubens with tomato soup and cheddar cheese crackers. Only thing I didn’t make was the pumpernickel (and it’s Russian dressing NOT thousand island……) ps I tried using almond flour once to make the crackers diabetic friendly but that failed. In an effort to be a teeny tiny bit healthy (or at least offset meals like the one ^^, we have been skipping pasta and making zoodles often. Last night was with a quickly thrown together turkey/tomato sauce. Pretty yummy. I have to say I love the crunchy texture of the zoodles in these dishes and don't miss pasta at all. I sliced these as thin as I could, and started early, so I could do them at low temp with my aluminum Vollrath skillet. I also covered the onions while cooking. I'm not sure if that helped, but this is the best batch I've made. A few turned into onion crisps, some were not fully caramelized, but overall an improved effort. Onions, tomato and aji limon.
