Went to the new restaurant that we are very lucky to have in our little valley yet again today and...yet again they blew us away. I had a Eggs Benedict with Pork Belly instead of canadian bacon. Was amazing. Wife had a Nicoise Salad, that was better than any we've had anywhere. This dude can cook. I found out he chef'd at the Amagani resort in Jackson Hole and at one of our very best local places Cafe Genevieve in Jackson. Todays lunch is sweet cream filled croissant with fresh cherries and goat curd with fresh fig and honey. Of course don’t forget the coffee.

Cut up fresh red bell peppers and slowly apply cut red peppers into Kitchen Aid food grinder attachment on low power - with fresh garlic cloves Medium flame and put the pot on the stove. Include salt and vegetable oil. 40 minutes +/- and stir to prevent burning at the bottom of the pot. Really delicious as a treat with nice quality crackers.
Been road tripping up the country for about a week now. Started in Palermo, ferry to Napoli (dont recommend it, the sea was angry lol), Roma (dinner at Aroma was spectacular), Firenze, and now at a little pit stop (first of 2 actually) before pushing up to Venezia for Carnevale.
