    Just caught up here after a a couple of weeks away from the forum. Yummy stuff folks ^^

    We didn't do any cooking while in Scottsdale given they have actual restaurants in PHX Metro, rather we went out once each day for lunch and merely nibbled in the evenings.

    Back in WY, first pizza night in two months...

    - Large size pepperoni (we both agreed this was the single best* pizza we have made in our couple of years of trying)

    - Mushroom, onion and thyme (the dough grabbed its container on the way out to the board and thus got malformed and wasn't round :-(

    - Pepperoni olive and onion

    - Pesto pizza with artichokes, olives and onion


    * Its always about the crust, and oddly this wasn't all that different than every other recipe. I used perhaps a few grams more fresh block yeast (well, frozen actually), tap water and Caputo 00 flour and some sea salt. Fermentation was 24 hours - the first 15 as one big ball, then divided into 275 gram balls for the final 9 hours. For some reason it came out remarkably light and delicate, formed a soft crunch on the bottom and then was airy throughout. It even cooked easier with less turning and seemed to need just the right amount of time - something like 90 seconds on the 750F Ooni stone. If we could make dough like this every time, well, we'd be fatter for one, but might even be opening our pizza place ;-) My wife went so far as to say she peferred all of these to the 5 pizzas we had a Pizzeria Bianco a couple of weeks ago. Me? I wouldn't go that far, but honestly it would be hard to say I've had much better pizza many times.

    Day 3 in London. Decided on Mediterranean for dinner. Sofra on Moulton in Mayfair about 10 blocks from the hotel.

    Spicy prawns and calamari starts. Fresh made pita and hummus. We both had the beef shish. OMG, great smoky wood flavor and juices running with each bite. I added a Negroni; Mini Me wanted to try Prosecco. 102 $USD and change. Servi compre.

    Day 4 in London. I don’t know much about Indian food, except that it’s amazing with all the spices, and I have to tell them medium spicy. Mini Me isn’t that adventurous so I stuck to the popular fare: butter and garlic naan, chicken tikka Marsala, pradha prawns, saag paneer, cucumber raita, and rice. London Pride amber ales. So good! 115 $USD. No discretionary service fee. Fire and Spice inside the Double Tree hotel off Oxford near Park Street in Mayfair. Winner!

    Lighting is odd, but it was tasty. Fajitas. The beef was wagyu from small family farm about 50 miles to our east.
