I don’t think that’s correct. Everything I’ve seen and heard suggests only one version of the GTS - with GPF fitted. Not sure why the modis code you’re referring to wouldn’t reference GPF
There is only 1 version of the 812 GTS with the GPF. I asked about deleting the GPF for my north american car. The factory reply was, no because there is no emissions testing without the GPF. So from the factory all 812 GTS will have GPF, and it will be a limited 2 year run.
The good news is that Novitec and Kline are actively working on GPF-delete options. Details TBC but we should see something before year end, I think.

GPF-based 812 model using Euro6D homologation The curious part is "GOL" (the trailing "A" is most likely "ADAS") That position of the code is typically used to indicate the Country or Region. It appears you are in Germany? Is this code from a German Ferrari dealer (probably not since I believe 812SF cannot be ordered)? I would guess that "GOL" might indicate "GLOBAL", so, maybe this code is from an area in the middle east?

IF the GPF is anything like the F8 i.e a part of the silencer and no sensors before or after it its a no brainer and can be taken out . I mean countries that don't give a rats yet.
The F8 has sensors, take out the GPFs and you will get codes within 75 miles of driving. The 812GTS GPFs are part of the catalysts (4-way catalyst) and like all GPF devices (no matter the manufacturer) it has sensors connecting into the ECU. The GPFs also create extra back pressure (chokes the exhaust channel with restricted flow) and that is also measured. The only "defeat" devices I know of for Ferraris inserts a device into the OBD2 port and intercepts the codes to prevent the ECU from reading them...

Really been massively hoping for some time that some of the design elements from John Collins’ (2!) 1 offs, the SP3JC , as I’ve been lucky enough to get close up to see the cars in person. Although mostly based on the TDF it lends itself to design elements in the new VS /VSAperta

The GPF according to the schematics has absolutely no plugs for any sensors at all. see below . Image Unavailable, Please Login If you look carefully there looks like 2 pipes one before and one after the canister.. what connects to that will be interesting. As you can see its a separate unit not a part of the catalytic converter.
I'm not sure where this diagram comes from but I doubt it's the 812 exhaust. I obtained from a Ferrari dealer service dept directly the parts diagrams showing the current 812 (see attached - bottom) and also the new model with GPF (top). I imagine the GTS would be exactly the same (with GPF version). The diagram shows the GPF integrated with the cats and various sensors. BTW I have spoken to Kline and Novitec recently and both are currently examining the 812 GTS exhaust and looking into GPF replacements. I estimate we will see a solution by year end Karl
