My oil pressure gauge appears to function properly. My oil pressure warning light not so much. When the water temperature reaches near 100 degrees Centigrade the red oil pressure warning light comes on. Is this a bad sender for the light or what? How can I address this?

My water temp never goes above 90c.
My oil temp comes close to 100c when oil fan cuts in.
When do your fans cut in?
    Is it a 3.2 or a 3.0?
On a 3.2 the lowest gauge on the right is oil temp, the one above is water.

+1 it never reaches 100 degrees. IMHO I think you will need to look at your water temp instead.

I had 90 degrees, but overtime it went up. I did a re-core of the radiator and took a German core for better cooling (flow is different and the core is more robust) now it reaches 85 degrees and seldom get to 90. My radiator was just deteriorating and oxidation does not provide cooling and will do the opposite.

Here is how it looked like:

Bartzagato had similar problem that the temp slowly went up to 100 and even higher if I am not mistaken. His radiator was clogged up from a center pipe that was deteriorating:
