Wow. They've been 5 for $2 at Kroger, and I thought that was a super deal, although I think our sweet corn is a little past its peak. A couple of weeks ago it was mmm, mmmm good! I like Morning Star spicy black bean veggie b burgers. One of the best I've tasted among national brands. The missus wanted Texas-style red beans & rice (as opposed to Cajun style). What the wife wants, the wife gets! Sweated an onion. Red kidney beans from a can. Made rice in chicken broth, added dried cilantro, cumin, chili powder, onion powder, garlic powder and a couple of tbsp of tomato sauce. Mix. Top with grated Monterey Jack. Add hot sauce. Also, my first attempt to use the Big Green Egg for baking. Made sweet cornbread. Use corn bread mix, add egg , bit of oil, milk, a little sugar. Bake in the BGE. Not bad...T
That's very Tex Mex, butter, mayo and cotija cheese. Parmesan, if you can't find cotija. Try sprinkling some cayenne pepper on it...T
Thank you. The cornbread was a tad dry and crumbly, & a little charred on the bottom. But, not bad on the flavor front. I wish I had thought about it earlier & bought a can of creamed corn. Would have made this... http://www.foodnetwork.com/recipes/alton-brown/creamed-corn-cornbread-recipe.html T
Cinnamon? Can't say I've tried that combo. Shake a little cayenne on next time, instead of cinnamon. 😋 T
We don't have it often, but when we do the missus likes it a little to the sweet side. So, I threw in a few tsp of sugar to the mix. Have you ever tried hush puppies? Basically it's a deep fried cornmeal ball. Crunchy outside. Fluffy inside. That's good southern eating...T
Salmon though depends if they open the commercial season. Some years they don't or its very short on the river. Corn prices are for the Okanagan. About a 4hr drive from Chilliwack. For me the farms selling it direct are about 20 minutes from my house much cheaper.
Have a friend who makes lime/jalapeno butter to go on grilled corn. THE BEST corn you will ever eat. I threw together a quick chicken dish last night. Just some chicken breast, carrots, celery, kale and some peanut sauce. Was going to have it with rice but didn't realize I was out of rice. Got some today and that will be dinner tonight now.
Another round of pesto this evening with an EVOO pan fried/steamed chicken breast to go along with it.. I wasn't kidding about this basil plant, it's becoming a shrub! Image Unavailable, Please Login
I love basil and my plants are getting huge but unfortunately they have bolted too, going to flower and seed. Doesn't taste as good and isn't as green after they do that. I had the same thing happen with some cilantro plants. Hard to control when we get a blast of hot weather.
I noticed the tiniest of flowers this evening. What do you do in this situation? Turn it upside down and plant another one on top of it? Edit: Just did a bit of research. Apparently if you pinch the flowers off when you see them and trim the plant back 25% periodically they'll just keep producing the good stuff.
Yummy. Looks like a Wienerschnitzel across the table? So, how does Viennese differ from Hungarian goulash? T
I tried really hard to not comment about the wiener across the table and the best I could do was point out that I'm not commenting. Ribs corn and smashed potatoes. Wish I had some baked beans and pecan pie! Next time. Image Unavailable, Please Login Image Unavailable, Please Login Sent from my iPhone using Tapatalk
