    Picked up the vacuum sealed chili lime chicken pack at Costco and threw it in a 146 degree bath for 2 hours and pan seared it. Not much to look at, so no pics, but it melted in our mouths.

    I did have to trim the edges off the package so it would fit though.

    I have not done the plank thing. I generally just season and throw some lemon and maybe onion on it then wrap it in foil. Keeps it nice and moist.

    Dump cake is about what it sounds like. I don't have specifics in front of me but basically you throw some canned pie filling in a pan then dump a cake mix on the top. Top with a bit of butter and some nuts if wanted and bake away. My Mom used to make it once in awhile when I was a kid so seeing it again from my "adopted" Mom was great. And it's really tasty.

    I've only had the plank at restaurants. Its good. If we do it at home its either on the grill or baked in the oven.

    It was good. Had the leftover steak on a sammich last night. Toasted some good sourdough bread, little mayo on one side, rubbed some garlic on the other, then melted some provolone over the top. Tasty!!

    Will be having some of the chicken and corn tonight with some jasmine rice. It should be good too.

    Notice the nice grill marks thanks to your "grate" recommendation. :)

    Did a mini shop at Safeway. Yesterday, it was overcast a cool. This morning looked the same, except it cleared up and got fairly hot. Was in jeans and too hot to cook. Safeway deli makes these large sub sandwiches. Grabbed one and some potato salad for tonight.

    So throw some ideas out for roasted Hatch chilies. I bought about a 2lb bag at Central Market the other day. They are stickered "hot" but trying a few they do have a little heat but not that spicy. I'm thinking green salsa or some green/pork chili. What other ideas are there??

    Safeway's deli is pretty good for various salads and their sandwiches are decent. Their sub is better then Subway in some ways. Safeway stores better for next day eating.

    The best grocery store food though is an Whole Foods like chain here called Urban Fare. They have a café style restaurant in their stores. I've done quickie business coffee type meetings there. Just in case it runs long and need some eats. I've also used them for mini coffee dates with Women for the same reason.

    I agree. Grilled hot wings are better than fried. It's been boring dinner wise at the ranch, reheating leftovers to empty out the freezer. Brisket & baked beans last night. Rib roast & salad tonight. Better make something low in cholesterol tomorrow, or my doc is gonna have a conniption. &#128556;

    I bought a half a turkey breast the other day while at Central Market. It's actually one of the things I really like about them. I love turkey but can't see buying a whole frozen one to cook unless it's a big family meal. My Central Market almost always has a selection of turkey breasts, legs and such.

    Roasted it off with some spices today and had some for lunch/dinner with leftover jasmine rice. Will probably have a turkey sammich for my late night snack when I get home.

    I'd not complain about good fish and chips. We've yet to find decent &#128031; and &#127839; in DFW.

    You can get a good bit of crispness grilling with the benefit of a nice char flavor. I never fry wings.



    I have never been able to get into fish and chips. With such a heavy batter, the fish always just seems to be full of oil and way too greasy. I haven't tried it in many years, so maybe i am overdue for trying again.

    Soft shells. I hate how the hard shells crumble when you eat them. I also very much prefer the taste of flour tortillas over corn.

    ^ Lots of truth in that post, Alex! A bit of spice and tang goes great with char. Flour is better than corn IMO.

    The number of places that do great fish and chips greatly outnumber the grease pits. There was an Irish pub at a casino in Vegas that did them very well. I've never been brave though to try and make them at home...T

    Here is my theory..that could very well be wrong.

    I think it is the use of a wet batter. I think when it goes into the fryer it absorbs some of the oil from cooking and makes it even heavier and greasier. Maybe a different type of batter/breading would be better. Maybe a higher temp on the fryer would get it to crisp quicker.

    ^ From what I've read, I think the hotter grease is a good idea. I've seen recipes that use club soda. I'm guessing the effervescence will lighten up the batter?

    I am actually going to most likely fry some fish up tonight. I had some fish at a friends house not long ago and at first was sad that he said he was going to fry halibut and ling cod, probably my two favorite fishes ever. But I generally grill or broil or just bake it. They are both great white meaty fish. But he used a fish fry corn meal pre packaged thing, and it was great. It's pretty much corn meal/flour and seasonings. But all he did was wet the fish with water, dip it in this coating and lightly fry.

    Really crispy, well seasoned but very light coating. Good stuff. So that's what I'm gonna try with some ling cod that I picked up.

    I tried making some green/hatch chile pork chili last night. It came out nice and spicy and tastes pretty good but it was more like soup. I just threw some roasted tomatillos, hatch chiles, browned pork with some onion and garlic. Threw all that in the crock pot with some chicken stock and left it overnight.

    Had a bowl this morning over rice and it was tasty but not really what I was looking for. Also tried making the spicy quacamole but it seems to be missing something. Not sure what yet though.

    Lovin these Hatch chiles though.

    Jdubbya... How many tomatillos? They can get watery when you sweat them up. Did you dredge your pork in corn meal or flour before browning it?

    Which guac recipe did you use?

    Tonight, we had turkey tacos. Simple. Browned turkey with a bunch of spices. For salsa I used the datil pepper salsa that I made with some of the peppers graciously provided by Ron (Streetsurfer); recipe in Ron's thread. A dollop of sour cream. Fold it up. Stuff in mouth.

    Cooking on all burners! &#128512; OK, all except the one for the griddle.

    People tend to forget Canada is British in origin. Its still a constitutional monarchy, the head of state is the Queen of England. The British parliament was responsible for our constitution until 1982! Net BC's population is still majority English in ethnicity, England, Scotland or Wales heritage is the majorities here's background. Net we can get pretty good fish n chips! :)
