    I have to say, sous vide tri tip is so tender it would work in a sandwich, cut 1" thick.

    Cooked tuna steaks on a Weber chimney starter. Think I saw Alton Brown do this. A few seconds per side. Gotta keep moving the tuna or it'll get torched. This would work great with sushi grade ahi where you can char up the outside, keep inside nice and rare. 😋

    Afterwards, flaked the tuna, add a smidgen of mayo, wasabi, garlic powder. Mixy mix. Serve over toasted garlic crostini. Side of white rice. Serve with a nice chilled vinho verde.

    Funny story about what may possibly be my new favorite cut of beef, the flat iron steak. I stopped at a local hole in the wall watering hole on the way home last night and the head cook/bottle washer was telling me how he loves to use the flat iron. I relayed my recent experience and he said he is getting them for cheap and uses them for their weekly $5.99 steak dinner special. He says they are the most tender cut of beef he's found and I'd agree. Just may be the first thing I try with my sous vider machiner. :)

    That was my second guess after I blew the pic up a bit.

    Well wouldn't you ****in know it I order stuff from Amazon probably close to weekly and have never had any problems whatsoever. Supposedly my Anova and a car part were delivered today but no friggin packages by the front door when I got home from work.

    Will see if I can sort this out later. I hate to say this but I had a feeling something like this was gonna happen eventually. I'll see if any of the neighbors noticed anything strange. Hopefully UPS just screwed up.

    Are you going by Amazon's tracking? If so, it's not accurate. I think it just generally goes by when the package should be delivered, but isn't tied to the shipping company's real world data. I've had a number of Amazon packages show as delivered on Amazon, but tracking from the shipper didn't match.

    My favorite hole in the wall place in WA is the Buzz Inn chain. I think that's what their special steak deals are. I mostly go there for their Philly cheesesteak but they no longer have it on the menu, so don't eat there as much.

    No, going by UPS. They say they left it by my door. Funny thing is they won't let you file for a lost package until after 24 hours have passed. It's gonna suck if it doesn't show. That means I need to figure something else out because I do get a lot of stuff shipped. Supposed to have another package showing up today in fact. But I have to go in to work for at least a few hours. Hoping the UPS truck shows before I leave so I can ask about it.

    By butcher insisted I try the Prime Ribeye. The taste was amazing. Maybe the best tasting steak I've ever had in my life. But I didnt like negotiating around the fat and the calories that come with it. Also, my filets can be cut with a fork. This needed a knife. So I still prefer the filets....but Holy Hell this was tasty.
